There are only a few people with that kind of leverage in the UFC and it is one of the most individual sports on the planet which isn't a great mix to get a union. I doubt even someone like Ronda campaigning for a union would do much good. It would have to be full camp such as Jackson's to get any serious traction on forming a union in the UFC. There is a reason it works in team sports as in the case of MLBPA and NFLPA while it is much harder to organize in individual sports. It's like reebok pay 90% to the ufc then 10% the fighters. When before the sponsors was like 80% fighters 10% UFC. So they all get badly fucked.
